Morning Postpartum Sweet Potato-Crusted Quiche Bake
This dish was created for an easy early postpartum protein packed easy bake: grounding, nutrient-rich, and easy to reheat. The natural sweetness of the sweet potato pairs perfectly with smoky bacon, fluffy eggs, and crisp vegetables — creating a breakfast that feels both comforting and energizing.
Ingredients
2–3 medium sweet potatoes, peeled and thinly sliced
2 Tbsp butter (for greasing)
8–10 slices thick-cut bacon
1 medium onion, chopped
2 cloves garlic, minced
1 bell pepper, diced
1 ear corn (or 1 cup frozen corn)
1–2 small tomatoes, diced
¼ cup fresh cilantro, chopped
12 large eggs
2–3 Tbsp water (for fluffier eggs)
1 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
Salt + pepper, to taste
Optional extras: mushrooms, spinach, zucchini, or any other veggies you have on hand
Instructions
Cook the bacon
Preheat oven to 400°F (200°C). Place bacon on a sheet pan and bake until crispy (about 15–20 minutes). Remove and set aside to cool, then chop. Reserve 2–3 tablespoons of the bacon drippings in a skillet for the vegetables.Bake the sweet potato crust
While the bacon is in the oven, grease a Pyrex baking dish with butter. Line the dish with thinly sliced sweet potatoes, overlapping slightly to create a crust. Place the dish in the oven (using the heat already from the bacon) and bake for 10–12 minutes until just tender.Sauté the vegetables
While the sweet potato crust is baking, sauté onion, garlic, peppers, and corn in the reserved bacon drippings until softened and golden. Add any extras like mushrooms, spinach, or zucchini — just be sure they cook down so no extra liquid seeps into the quiche. Stir in tomatoes and cilantro last.Whisk the eggs
In a large bowl, whisk eggs, water, salt, and pepper until fluffy.Assemble
Remove the sweet potato crust from the oven. Layer the sautéed vegetables first, then the chopped bacon. Pour the whisked eggs over top and finish with a sprinkle of cheese.Bake
Return to the oven and bake for 25–30 minutes, until golden on top and fully set in the middle.Serve
