Family Roasted Chicken with Sweet Apple Gravy

Ingredients

  • 1 whole organic chicken (3–4 lbs)

  • 4 large sweet red apples (like Fuji or Honey Crisp), cut into thick slices long

  • 1 small orange or tangerine, halved

  • 1 handful mixed herbs (rosemary, thyme, sage)

  • 3–4 garlic cloves, peeled

  • 2 tbsp ghee or unsalted butter (or a mix of both)

  • Garlic salt, to taste

  • 2–3 caps of rice vinegar or white vinegar

  • A splash of juice (apple, orange, or even a bit of lemon works)

  • Olive oil, for coating

  • Optional: whole potatoes, rubbed in olive oil for roasting

  • Optional: mixed greens or seasonal vegetables for serving

    Instructions

    1. Preheat your oven to 375°F (190°C).

    2. Prepare the base: Coat the bottom of a Dutch oven with a light layer of olive oil. Spread the chopped apples evenly across the bottom — these will act as a sweet, aromatic “rack” for the chicken.

    3. Prepare the chicken: Remove the gizzards from the chicken cavity. Stuff the inside with the halved orange or tangerine, garlic cloves, and a handful of fresh herbs.

    4. Rub and season: Using your hands, coat the chicken generously with ghee, butter, or both. Make sure to get under the wings and thighs. Sprinkle garlic salt all over the bird, massaging it in.

    5. Brighten it up: Drizzle 2–3 caps of rice vinegar or white vinegar over the top of the chicken. Add a splash of juice to the base for extra moisture and flavor.

    6. Roast covered in the Dutch oven, basting the chicken with its juices every 30 minutes for extra moisture and flavor. Keep covered for most of the cooking time, and uncover during the last 20–30 minutes to crisp the skin to a golden finish.

    7. Add whole potatoes (optional): If using, rub them with olive oil and nestle them around the chicken or roast them on a separate sheet pan at the same time.

    8. Make the gravy: Once the chicken is done, remove it and set aside to rest. Strain or blend the apple-rich drippings from the Dutch oven to make a naturally sweet, rich gravy. You can reduce it on the stove if you'd like it thicker.

    9. Serve: Plate the carved chicken with roasted potatoes, drizzle with apple gravy, and serve with a fresh salad or cooked greens.
